Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
2 cups crushed chocolate sandwich cookies (like Oreos)
1 (14 ounce) can sweetened condensed milk
3 cups powdered sugar, sifted
1 teaspoon vanilla extract
1 cup white chocolate chips
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, mix the melted butter with the crushed cookies. Press this mixture evenly into the bottom of the prepared pan.
In a separate large bowl, whisk together the sweetened condensed milk and vanilla extract.
Gradually add the sifted powdered sugar to the milk mixture, mixing until a thick dough forms.
Press this dough evenly over the cookie crust layer in the pan.
Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Spread the melted white chocolate evenly over the dough layer.
Refrigerate for at least 3 hours, or until completely firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into squares before serving.
Notes
For the cleanest cuts, use a long, sharp knife warmed slightly under hot water between slices.
You can add a pinch of salt to the white chocolate layer to balance the sweetness.
If you prefer a stronger cookies and cream flavor, reserve 1/4 cup of crushed cookies to sprinkle over the melted white chocolate before chilling.
