Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (14 ounce) can sweetened condensed milk
  • 3 cups shredded coconut
  • 1 cup chopped almonds
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine the melted butter, graham cracker crumbs, and powdered sugar. Press this mixture firmly into the bottom of the prepared pan to form the base layer.
  3. In a separate large bowl, mix together the vanilla extract, sweetened condensed milk, shredded coconut, and chopped almonds. Spread this coconut mixture evenly over the graham cracker base.
  4. Chill the pan in the refrigerator for at least 1 hour, or until the coconut layer is firm.
  5. In a small saucepan or microwave-safe bowl, melt the chocolate chips and coconut oil together until smooth. Stir until fully combined.
  6. Pour the melted chocolate mixture over the chilled coconut layer. Spread it evenly to cover completely.
  7. Return the pan to the refrigerator and chill for another 2-3 hours, or until the chocolate is completely set.
  8. Lift the bars out of the pan using the parchment paper overhang. Cut into squares before serving.

Notes

  • For cleaner layers, make sure the first layer is tightly packed before adding the coconut mixture.
  • Chilling time is crucial for the bars to hold their shape when cut.
  • You can substitute semi-sweet chocolate with milk chocolate or dark chocolate.
