Make a rich, creamy, and deeply chocolatey French Silk Pie using a safe, tempered egg method for a truly silky smooth texture.

Ingredients

Scale
  • 1 (9 inch) unbaked flaky pie crust
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 4 ounces unsweetened chocolate, melted and cooled slightly
  • 1/2 cup boiling water
  • 1 cup heavy whipping cream
  • Chocolate shavings, for garnish

Instructions

  1. Prepare the pie crust according to your favorite recipe or use a store-bought crust. Bake the crust until lightly golden brown (blind bake). Let the crust cool completely.
  2. In a large bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 3 minutes.
  3. In a separate small, heatproof bowl, whisk the egg yolks. Slowly drizzle about 1/4 cup of the boiling water into the yolks while whisking constantly to temper them. This gently cooks the yolks.
  4. Add the tempered yolk mixture to the butter and sugar mixture. Beat until well combined.
  5. Beat in the vanilla extract and almond extract.
  6. Pour the melted and slightly cooled unsweetened chocolate into the mixture. Beat until smooth.
  7. Slowly beat in the remaining 1/4 cup of boiling water until the filling is smooth and glossy.
  8. Pour the chocolate filling into the cooled, pre-baked pie crust. Smooth the top with a spatula.
  9. Chill the pie in the refrigerator for at least 4 hours, or until the filling is firm.
  10. Just before serving, whip the heavy whipping cream until stiff peaks form. Spread or pipe the whipped cream over the chilled pie.
  11. Garnish the top with chocolate shavings. Slice and serve cold.

Notes

  • For a cookie crust alternative, press 1 1/2 cups of finely crushed Oreo cookies mixed with 1/4 cup melted butter into the pie plate and chill instead of baking.
  • If you prefer a no-bake version, substitute the egg yolks with 8 ounces of softened cream cheese mixed with 1/2 cup powdered sugar, and use 1 cup of melted semi-sweet chocolate chips instead of unsweetened chocolate.
  • Ensure the melted chocolate is not hot when added to the butter mixture, or it may cause the butter to separate.
