Ingredients
Scale
2 Boneless, skinless chicken breasts (about 6 oz each)
1/4 cup Panko breadcrumbs
2 tablespoons grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
1 large egg white
Cooking spray
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray.
In a shallow dish, whisk the egg white until slightly frothy.
In another shallow dish, combine the Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, and garlic powder. Mix well.
Season both sides of the chicken breasts lightly with salt and pepper.
Dip each chicken breast first into the egg white, letting any excess drip off.
Dredge the chicken thoroughly in the breadcrumb mixture, pressing gently so the coating adheres.
Place the coated chicken on the prepared baking sheet. Lightly mist the tops with cooking spray for extra crispness.
Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
Serve immediately and enjoy your delicious, lighter meal.
Notes
For an extra flavor boost, add a pinch of paprika to the breadcrumb mix.
Use thin-cut chicken breasts to reduce cooking time slightly.
This pairs wonderfully with a fresh green salad or steamed vegetables.
