Ingredients
Scale
6 cups cubed seedless watermelon
8 ounces feta cheese, cubed or crumbled
1/4 cup fresh mint leaves, roughly chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey
Pinch of black pepper
Instructions
Prepare the balsamic glaze: Combine the balsamic vinegar and honey in a small saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until the liquid reduces by half and thickens slightly, about 5 to 7 minutes. Remove from heat and set aside to cool.
In a large bowl, gently combine the cubed watermelon and the feta cheese.
Add the chopped fresh mint leaves to the bowl.
Drizzle the olive oil over the salad mixture. Gently toss the ingredients together.
Arrange the salad on a serving platter.
Drizzle the cooled balsamic glaze over the top of the salad.
Sprinkle with a pinch of black pepper before serving immediately.
Notes
For a different flavor, substitute goat cheese for feta.
If you prefer a tangier dressing, use lime juice instead of olive oil.
Chill the watermelon cubes for at least 30 minutes before assembling for the best refreshing quality.
