This recipe brings back a wonderful memory from a small café. We roast the tomatoes and feta until they are sweet and creamy, then blend them into a deeply flavorful soup. It is a simple way to capture a perfect moment in a bowl.

Ingredients

Scale
  • 2 pints cherry tomatoes
  • 1 block (7-8 oz) feta cheese
  • 1 small red onion, quartered
  • 4 cloves garlic, unpeeled
  • 1/4 cup olive oil, plus more for drizzling
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cherry tomatoes, red onion quarters, and unpeeled garlic cloves on a baking sheet.
  3. Place the block of feta cheese in the center of the baking sheet.
  4. Drizzle everything generously with the 1/4 cup of olive oil.
  5. Sprinkle the oregano, salt, and pepper over the tomatoes and onions.
  6. Roast for 25 to 30 minutes, or until the tomatoes are blistered and the feta is soft and lightly browned.
  7. Remove from the oven. Squeeze the roasted garlic out of its skin into a bowl.
  8. Transfer the roasted tomatoes, onions, and softened feta (including any juices from the pan) to a large pot or Dutch oven. Add the roasted garlic.
  9. Pour in the vegetable broth.
  10. Bring the mixture to a simmer over medium heat. Cook for about 5 minutes, stirring gently to help the feta dissolve.
  11. Carefully transfer the mixture to a blender. Blend until completely smooth. You may need to do this in batches.
  12. Return the soup to the pot. Taste and adjust seasoning if needed. Heat through gently before serving.
  13. Ladle the soup into bowls and garnish with fresh basil leaves and an extra drizzle of olive oil.

Notes

  • If you do not have a high-powered blender, you can press the soup through a fine-mesh sieve after blending for an even silkier texture.
  • Richard loves recalling the subtle spice in the soup we had abroad; a pinch of red pepper flakes added before roasting works well.
  • This soup tastes even better the next day, so feel free to make extra.
