Ingredients
Scale
3 Large Eggs
1 Tablespoon Milk or Cream
1 Teaspoon Butter
Salt, to taste
Black Pepper, to taste
2 Slices Bread
Instructions
Gently whisk the eggs and milk or cream in a bowl. Add salt and pepper now. Do not over-whisk; you want some structure.
Place a non-stick skillet over low heat. Add the butter and let it melt completely.
Pour the egg mixture into the warm pan. Let the eggs set slightly around the edges for about 30 seconds without stirring.
Using a rubber spatula, gently push the cooked edges toward the center, tilting the pan so the uncooked egg flows underneath.
Continue this slow pushing and folding motion. Keep the heat low; this prevents the eggs from becoming tough.
When the eggs are mostly set but still look slightly wet, remove the pan from the heat immediately. Residual heat will finish cooking them to fluffiness.
Toast your bread to your liking.
Spoon the creamy, fluffy scrambled eggs onto the toast. Serve right away.
Notes
Low heat is your best friend for creamy eggs. Resist the urge to turn up the temperature.
Removing the eggs while they are slightly underdone guarantees a soft texture.
We sometimes add a tiny pinch of finely chopped chives right at the end for color.
