Ingredients
Scale
2 sheets Rice Paper
2 Eggs
1 tablespoon Water
Pinch Salt
1 teaspoon Cooking Oil
Optional: Chopped Scallions or Herbs
Instructions
Mix eggs, water, and salt well in a shallow dish large enough to fit the rice paper.
Heat the cooking oil in a non-stick pan over medium heat.
Quickly dip one sheet of rice paper into the egg mixture, coating both sides. Do not soak it.
Carefully lay the coated rice paper flat in the hot pan.
Pour the remaining egg mixture over the rice paper in the pan, spreading it to cover the surface evenly.
If using, sprinkle scallions or herbs over the top.
Cook for 2-3 minutes until the bottom is set and lightly golden.
Gently fold the omelette in half using a spatula.
Cook for another minute on each side until the egg is cooked through and the rice paper is slightly chewy.
Repeat the process for the second sheet if making two. Serve immediately.
Notes
Work quickly when dipping the rice paper.
Use a pan size that matches the rice paper sheets for easy handling.
