Ingredients
Scale
1 pound ground beef (80/20 recommended)
1 large yellow onion, thinly sliced
4 hamburger buns
Salt and black pepper to taste
Butter or oil for the griddle
American cheese slices (optional)
Instructions
Divide the ground beef into 4 equal portions. Do not form patties yet.
Heat your griddle or large cast-iron skillet over medium-high heat. Add a little butter or oil.
Place a portion of the sliced onion onto the hot surface where you plan to cook the burger. This will caramelize and crisp up.
Place a beef portion directly on top of the onion pile.
Immediately season the top of the beef heavily with salt and pepper.
Wait about 30 seconds to 1 minute. You want the bottom to start forming a crust.
Using a sturdy, flat spatula, press down firmly and quickly on the beef ball to smash it thin. This is your smash timing moment. Hold the pressure for about 10 seconds.
Cook for about 2 minutes without moving the patty. This builds the crispy edge.
Scrape carefully under the patty to lift it, making sure to get all the crispy bits (the fond) off the griddle.
Flip the patty. If using cheese, place a slice on top immediately. Cook for another 1-2 minutes until done to your liking.
Toast your buns lightly on the griddle.
Assemble your burger: bottom bun, patty with onions, top bun. Serve right away.
Notes
The quality of the beef makes a difference in the final smash texture.
Use high heat for the best crisping action.
Do not overwork the meat before smashing; keep it loose.
Scraping technique is key to keeping those crispy edges intact.
