This is the famous Viral Green Goddess Salad dressing recipe, capturing the fresh, herbaceous flavors Eleanor and Richard remember from their travels. It brings back delicious memories with every bite.

Ingredients

Scale
  • 1 cup fresh parsley
  • 1/2 cup fresh chives
  • 1/2 cup fresh tarragon
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon anchovy paste (optional)
  • 1/2 cup olive oil
  • 1/2 cup mayonnaise or plain Greek yogurt
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and thoroughly dry all the fresh herbs. This step is important for a smooth dressing.
  2. Combine the parsley, chives, tarragon, basil, garlic, white wine vinegar, Dijon mustard, and anchovy paste (if using) in a food processor.
  3. Pulse the mixture until it is finely chopped.
  4. With the food processor running, slowly stream in the olive oil until emulsified.
  5. Add the mayonnaise or yogurt and process until the dressing is creamy and well combined.
  6. Taste the dressing. Add salt and pepper as needed.
  7. Use immediately on your favorite salad greens or store in the refrigerator.

Notes

  • Richard remembers a hint of tarragon from a café in Paris; do not skip the tarragon.
  • For a tangier flavor, use plain Greek yogurt instead of mayonnaise.
  • If you do not have a food processor, you can finely chop the herbs by hand, but the texture will be less smooth.
  • This dressing tastes even better after resting in the refrigerator for an hour.
