Ingredients
Scale
4 large Eggs
2 slices Bread (your favorite kind)
2 tablespoons Butter
Pinch of Salt
Pinch of Black Pepper
1 teaspoon Fresh Chives, chopped (for garnish)
Instructions
Prepare your bread: Cut each slice of bread into four equal squares. You should have eight pieces total.
Melt half the butter in a non-stick skillet over medium heat.
Cook the bread squares until golden brown and crisp on both sides. Remove from the skillet and set aside.
Wipe the skillet clean. Add the remaining butter.
Crack the four eggs into the skillet, being careful not to break the yolks. You are making four individual fried eggs.
Cook the eggs until the whites are set but the yolks remain runny, about 2 to 3 minutes. Season lightly with salt and pepper while cooking.
To assemble the ‘Flight’: Place one piece of toast on your serving plate. Gently slide one cooked egg on top of the toast.
Repeat this process until you have four stacks of toast and egg.
Garnish the tops of the eggs with finely chopped fresh chives. Serve immediately.
Notes
The key to the ‘Flight’ look is keeping the eggs small and perfectly round. Use a ring mold if you want perfect uniformity.
We suggest serving this immediately while the toast is still warm and the yolk is perfectly liquid for dipping.
Richard remembers the original version used tiny rounds of brioche. Feel free to substitute your bread accordingly.
