Make these fantastic Viral Chili Oil Eggs to bring a warm, spicy kick to your table. Controlling the oil temperature is key for perfection. This recipe brings back memories of bold street food flavors.

Ingredients

Scale
  • 6 Large Eggs
  • 1 cup Neutral Oil (like canola or vegetable)
  • 1/2 cup Chili Flakes (a mix of Korean and Sichuan if possible)
  • 2 tablespoons Sichuan Peppercorns
  • 4 cloves Garlic, thinly sliced
  • 1-inch piece Ginger, thinly sliced
  • 1 teaspoon Salt
  • 1 teaspoon Sugar

Instructions

  1. Gently place eggs in a saucepan and cover with cold water. Bring water to a rolling boil.
  2. Once boiling, immediately turn off the heat, cover the pan, and let the eggs sit for exactly 7 minutes for a jammy yolk.
  3. Immediately transfer eggs to an ice bath to stop the cooking process. Let them cool completely, then peel carefully. Set aside.
  4. In a small, heavy-bottomed saucepan, combine the neutral oil, chili flakes, Sichuan peppercorns, garlic, and ginger.
  5. Place the saucepan over medium-low heat. You must heat this slowly. Watch the oil carefully.
  6. When the garlic and ginger just begin to turn pale gold (around 275F to 300F), remove the pan from the heat immediately. This slow infusion is where the flavor develops without burning the aromatics.
  7. Let the mixture cool slightly for about 5 minutes. Stir in the salt and sugar.
  8. Gently pour the warm chili oil mixture over the peeled eggs in a heatproof jar, making sure the oil covers them completely.
  9. Seal the jar and let the eggs steep in the oil in the refrigerator for at least 24 hours before serving.

Notes

  • Peel the eggs under cool running water for easier removal of the shell.
  • A lower oil temperature prevents the chili flakes from turning bitter. Patience here is rewarding.
  • Use the leftover infused oil on noodles or vegetables!
