Ingredients
Scale
1 pound carrots, peeled into ribbons
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1/4 teaspoon salt
Freshly ground black pepper to taste
Instructions
Peel your carrots into thin ribbons using a vegetable peeler. Place them in a medium bowl.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey (or maple syrup), salt, and pepper. This is the dressing you are looking for!
Pour the dressing over the carrot ribbons.
Toss everything gently until the carrots are evenly coated.
Let the salad sit for at least 10 minutes before serving. This allows the dressing to soften the ribbons slightly, creating that addictive texture.
Serve immediately and enjoy the memory!
Notes
For an extra layer of flavor, Richard suggests adding a small pinch of smoked paprika to the dressing.
If you do not have a vegetable peeler, you can use a mandoline set to a very thin slice.
We find that letting this salad rest for 20 minutes gives the best ribbon texture.
