Prepare this creamy, dairy-free overnight oats recipe the night before for a satisfying, no-cook vegan breakfast featuring fresh strawberry flavor.

Ingredients

Scale
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup unsweetened almond milk (or soy/oat milk for extra creaminess)
  • 1/4 cup vegan plain yogurt (coconut or soy based recommended)
  • 1 teaspoon maple syrup (adjust to taste)
  • 1/4 teaspoon vanilla extract
  • 1/4 cup fresh or frozen strawberries, chopped
  • 1 tablespoon strawberry jam or preserves (optional, for extra flavor)
  • Pinch of salt

Instructions

  1. In a jar or container with a lid, combine the rolled oats, chia seeds, almond milk, vegan yogurt, maple syrup, vanilla extract, and salt.
  2. Stir all ingredients well until the chia seeds and oats are fully submerged and mixed.
  3. Gently fold in the chopped strawberries and the optional strawberry jam.
  4. Seal the container and place it in the refrigerator for at least 6 hours, or preferably overnight.
  5. In the morning, check the consistency. If it is too thick, add a splash more plant milk until you reach your desired texture.
  6. Serve cold directly from the jar. Top with extra fresh strawberries or a sprinkle of granola if desired.

Notes

  • For a richer, cheesecake-like flavor, add 1 teaspoon of lemon juice to the mixture before chilling.
  • If using frozen strawberries, they will release more liquid, making the oats slightly softer by morning.
  • For a protein boost, add 1 scoop of unflavored or vanilla vegan protein powder before mixing.
  • If you prefer a sweeter result, increase the maple syrup to 1.5 teaspoons.
