Ingredients
Scale
1/2 cup tahini
1/4 cup fresh lemon juice
2 tablespoons cold water (plus more for thinning)
1 clove garlic, minced
1 teaspoon maple syrup (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the tahini, lemon juice, minced garlic, maple syrup (if using), salt, and pepper into a medium bowl.
Whisk the ingredients together vigorously. The mixture will seize up and become very thick initially.
Slowly drizzle in the cold water, one tablespoon at a time, while continuously whisking.
Continue whisking until the dressing emulsifies and reaches your desired creamy consistency. Add more water, one teaspoon at a time, if you prefer a thinner dressing.
Taste and adjust seasoning, adding more salt or lemon juice as needed.
Use immediately or store in an airtight container in the refrigerator.
Notes
If the dressing becomes too thick after refrigeration, whisk in a few drops of warm water to restore the creamy texture.
For a tangier flavor, increase the lemon juice by one tablespoon.
To make this dressing thicker for dipping vegetables, reduce the initial water addition to just one tablespoon total.
