Ingredients

Scale
  • 2 lbs Chicken or Lamb, cut into pieces
  • 2 cups Basmati Rice
  • 1 cup Plain Yogurt
  • 1/4 cup Ginger-Garlic Paste
  • 2 large Onions, thinly sliced
  • 1/2 cup Ghee or Oil
  • 1/4 cup Mint Leaves, chopped
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Milk, warmed
  • Pinch of Saffron Threads
  • 2 Bay Leaves
  • 4 Green Cardamom Pods
  • 4 Cloves
  • 1 inch Cinnamon Stick
  • 1 tsp Turmeric Powder
  • 2 tsp Red Chili Powder
  • 2 tsp Biryani Masala
  • Salt to taste

Instructions

  1. Marinate the meat: Mix meat with yogurt, ginger-garlic paste, turmeric, chili powder, biryani masala, and salt. Let it sit for at least 2 hours.
  2. Fry onions: Heat ghee or oil. Fry half the sliced onions until deep golden brown (birista). Remove and set aside.
  3. Cook meat: In the same oil, add bay leaves, cardamom, cloves, and cinnamon. Sauté for one minute. Add the marinated meat and cook until done and oil separates. Stir in half the mint and cilantro.
  4. Soak saffron: Soak saffron threads in warm milk. Set aside.
  5. Cook rice: Wash and soak rice for 30 minutes. Boil water with salt and whole spices. Add rice and cook until 70 percent done. Drain immediately.
  6. Layer the biryani: In a heavy-bottomed pot, spread a layer of cooked meat. Top with half the remaining fried onions, mint, and cilantro.
  7. Add rice layer: Gently spread the partially cooked rice over the meat layer. Drizzle saffron milk evenly over the rice. Sprinkle remaining fried onions, mint, and cilantro on top.
  8. Dum cook: Cover the pot tightly with a lid (use dough seal if you wish for authenticity). Cook on very low heat for 30-40 minutes until the rice is fully cooked and the flavors have melded.
  9. Serve: Gently fluff the biryani with a fork before serving. Serve hot with raita.

Notes

  • Richard remembers the best biryani had perfectly browned onions; do not rush frying them.
  • The saffron milk gives the rice its signature color and aroma.
  • Use high-quality Basmati rice for the fluffiest texture.
