A rich, moist, and sweet pecan quick bread featuring toasted pecans and topped with a simple brown butter glaze for deep flavor.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans, lightly toasted
  • For the Glaze: 1/2 cup powdered sugar
  • For the Glaze: 2 tablespoons unsalted butter
  • For the Glaze: 1 teaspoon milk

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined; do not overmix.
  6. Fold in the toasted chopped pecans gently.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. To make the glaze, melt 2 tablespoons of butter in a small saucepan over medium heat until it browns and smells nutty. Remove from heat immediately.
  11. Whisk the browned butter into the powdered sugar and milk until smooth. Drizzle the glaze over the cooled bread before slicing and serving.

Notes

  • To toast pecans, spread them on a baking sheet and bake at 350 degrees F for 5 to 7 minutes, watching closely to prevent burning.
  • Buttermilk substitutes: Add 1 tablespoon of white vinegar or lemon juice to 1 cup of regular milk and let it sit for 5 minutes before measuring out 1 cup for the recipe.
  • This bread is excellent served warm with extra butter.
