A recipe for juicy chicken breasts stuffed with a creamy spinach and cream cheese mixture, wrapped in bacon, and baked until golden.

Ingredients

Scale
  • 4 large boneless, skinless chicken breasts
  • 4 ounces cream cheese, softened
  • 1/2 cup frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 8 slices thin-cut bacon
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish.
  2. In a small bowl, combine the softened cream cheese, dried spinach, Parmesan cheese, minced garlic, pepper, and salt. Mix until fully incorporated.
  3. Place a chicken breast on a cutting board. Make a horizontal pocket in the thickest side of the chicken breast, cutting almost all the way through but leaving a half-inch border intact.
  4. Spoon one-fourth of the cream cheese mixture into the pocket of each chicken breast. Gently press the opening closed.
  5. Wrap two slices of bacon around the center of each stuffed chicken breast, securing the filling. If needed, secure the bacon ends with toothpicks.
  6. Brush the bacon-wrapped chicken lightly with olive oil and place them in the prepared baking dish.
  7. Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the bacon is crispy.
  8. Remove from the oven and let the stuffed chicken rest for 5 minutes before serving.

Notes

  • To prevent the stuffing from leaking, do not overfill the chicken pockets.
  • If you prefer not to use bacon, you can secure the opening with toothpicks and bake as directed.
  • For a crispier bacon finish, you can briefly broil the chicken for the last 2 minutes, watching closely to prevent burning.
