Make these Steamed Pork and Scallion Dumplings following Richard’s memory of a perfect bite. You will create a savory, juicy filling wrapped in delicate wrappers and steam them until tender. This recipe brings back a cherished flavor memory for you and your family.

Ingredients

Scale
  • 1 pound ground pork
  • 4 scallions, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon salt
  • 1 package round dumpling wrappers (about 50 wrappers)
  • Water, for sealing
  • Dipping sauce ingredients (soy sauce, rice vinegar, chili oil, to taste)

Instructions

  1. In a large bowl, combine the ground pork, chopped scallions, soy sauce, sesame oil, ginger, white pepper, and salt.
  2. Mix the filling ingredients thoroughly with your hands until everything is well combined. Do not overmix.
  3. Place about one teaspoon of the filling in the center of a dumpling wrapper.
  4. Moisten the edge of the wrapper with water using your finger.
  5. Fold the wrapper in half to form a half-moon shape. Pinch the center closed, then create small pleats along one side of the edge, pressing firmly to seal the dumpling closed.
  6. Arrange the finished dumplings on a parchment-lined tray, making sure they do not touch.
  7. Line a steamer basket with parchment paper or cabbage leaves, leaving space between each dumpling.
  8. Fill a wok or pot with about two inches of water and bring it to a boil.
  9. Place the steamer basket over the boiling water, cover tightly, and steam the dumplings for 8 to 10 minutes, or until the pork filling is cooked through and firm.
  10. Prepare your favorite soy-based dipping sauce while the dumplings steam.
  11. Serve the Steamed Pork and Scallion Dumplings immediately with the dipping sauce.

Notes

  • You can make the filling ahead of time and store it in the refrigerator for up to one day.
  • If you prefer to freeze uncooked dumplings, place them on a baking sheet and freeze until solid, then transfer them to a freezer bag.
  • Steam frozen dumplings directly from frozen, adding a few extra minutes to the steaming time.
