Ingredients

Scale
  • 1 medium spaghetti squash
  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1/2 cup firm tofu, cubed
  • 1/4 cup unsalted peanuts, chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sriracha or chili garlic sauce (adjust to taste)
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar or sweetener
  • 1/4 cup shredded carrots
  • 1/4 cup bean sprouts
  • Optional: 1/4 cup cooked shrimp or chicken

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  4. Once cooled slightly, shred the squash flesh with a fork to create spaghetti-like strands.
  5. While the squash is roasting, prepare the sauce by whisking together soy sauce, lime juice, sriracha, fish sauce, and brown sugar in a small bowl.
  6. Heat coconut oil in a large skillet or wok over medium-high heat.
  7. Add minced garlic and cook for about 30 seconds until fragrant.
  8. Add cubed tofu (and optional shrimp or chicken if using) and cook until lightly browned.
  9. Add the shredded spaghetti squash to the skillet and toss to combine with the tofu.
  10. Pour the prepared sauce over the squash and tofu mixture.
  11. Add shredded carrots and bean sprouts, and stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  12. Serve immediately, garnished with chopped peanuts, cilantro, and sliced green onions.

Notes

  • For a quicker meal, you can microwave the spaghetti squash. Pierce it several times with a fork, then microwave on high for 8-10 minutes, rotating halfway through.
  • Adjust the sriracha or chili garlic sauce to your preferred spice level.
  • Feel free to add other vegetables like bell peppers, broccoli, or snap peas.
