Ingredients

Scale
  • 3 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 6 cups low-sodium chicken broth
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon black pepper, plus more to taste
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add chicken thighs and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Return chicken to the pot. Add chicken broth, salt, pepper, thyme, and sage. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes, or until chicken is cooked through.
  4. While the chicken simmers, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In a separate small bowl, whisk together milk and melted butter.
  6. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  7. Remove chicken from the pot and shred it. Return the shredded chicken to the pot.
  8. Bring the broth to a gentle simmer. Drop spoonfuls of the dumpling dough onto the simmering liquid.
  9. Cover the pot and cook for 15-20 minutes, without lifting the lid, until the dumplings are cooked through and fluffy.
  10. Taste and adjust seasoning with salt and pepper if needed. Serve hot.

Notes

  • For an even richer flavor, you can use bone-in, skin-on chicken pieces and remove the skin and bones after cooking.
  • If you prefer a thicker broth, you can mix 2 tablespoons of flour with 1/4 cup of cold water to create a slurry and stir it into the simmering soup before adding the dumplings.
  • Fresh herbs like parsley or chives can be used for garnish.
