This is a classic, tender slow cooker pot roast recipe. You cook beef with hearty vegetables in a crockpot for a savory, melt-in-your-mouth family dinner with very little effort.

Ingredients

Scale
  • 3 lb beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion, cut into wedges
  • 4 carrots, cut into large pieces
  • 4 potatoes, cut into large chunks
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 packet dry onion soup mix

Instructions

  1. Pat the beef roast dry. Season all sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until nicely browned.
  3. Place the seared roast in your slow cooker.
  4. Arrange the onion, carrots, and potatoes around the roast.
  5. Sprinkle the minced garlic and dry onion soup mix over the ingredients.
  6. Pour the beef broth over everything.
  7. Cover the slow cooker. Cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender.
  8. Shred the meat and serve with the vegetables and cooking liquid.

Notes

  • For extra flavor, add a splash of Worcestershire sauce to the broth.
  • If the liquid seems too thin when serving, mix one tablespoon of cornstarch with two tablespoons of cold water and stir into the hot liquid during the last 30 minutes of cooking.
  • This recipe is designed for maximum flavor with minimal hands-on time, just as Eleanor and Richard intended.
