Ingredients

Scale
  • 4 large baking potatoes
  • 2 tbsp olive oil
  • 1 lb ground lamb
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes, prick them with a fork, and bake for 50-60 minutes, or until tender.
  3. While the potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  4. Add the chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  5. Stir in the minced garlic and cook for 1 minute more until fragrant.
  6. Pour in the beef broth and Worcestershire sauce. Add the rosemary and thyme. Bring to a simmer, then reduce heat and cook for 10-15 minutes, allowing the sauce to thicken slightly.
  7. Season the mixture with salt and pepper to taste.
  8. Stir in the frozen peas and cook for a few minutes until heated through.
  9. Once the potatoes are baked, carefully slice them in half lengthwise. Gently scoop out most of the flesh, leaving a border to create a boat.
  10. Mash the scooped-out potato flesh with a fork and stir it into the lamb mixture, or set aside for another use.
  11. Spoon the shepherd’s pie filling generously into the potato boats.
  12. If desired, top with shredded cheddar cheese.
  13. Return the stuffed potatoes to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  14. Serve hot.

Notes

  • For a richer flavor, you can add a splash of red wine to the simmering sauce.
  • If you don’t have lamb, ground beef or turkey can be substituted.
  • Top with mashed potatoes for an extra layer of creamy goodness.
