Ingredients

Scale
  • 2 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 lemon, half juiced, half sliced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes
  • Optional: fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  3. Place the salmon fillets on one side of the prepared baking sheet. Spoon half of the lemon garlic mixture over the salmon.
  4. Arrange the asparagus and cherry tomatoes on the other side of the baking sheet. Drizzle the remaining lemon garlic mixture over the vegetables.
  5. Top the salmon with lemon slices.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp.
  7. Garnish with fresh parsley if desired. Serve immediately.

Notes

  • You can substitute other vegetables like broccoli florets or bell pepper strips.
  • Ensure salmon is cooked to your desired doneness.
