Ingredients
Scale
1 pound large shrimp, peeled and deveined
2 ears of corn, husked and cut into 1-inch pieces
1 tablespoon olive oil
2 teaspoons Cajun seasoning blend
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons unsalted butter, cut into small pieces
Preheat your oven to 400 degrees Fahrenheit. Prepare four large sheets of heavy-duty aluminum foil on a baking sheet.
In a medium bowl, combine the shrimp and corn pieces.
Drizzle the olive oil over the shrimp and corn. Toss gently to coat.
In a small bowl, mix together the Cajun seasoning, smoked paprika, garlic powder, and salt. Sprinkle this mixture over the shrimp and corn. Toss again until everything is evenly seasoned.
Divide the shrimp and corn mixture evenly among the four foil sheets, placing the mixture in the center of each sheet.
Place a few small pieces of butter on top of the mixture in each packet.
Fold the edges of the foil up and over the ingredients, sealing the packets tightly to create a closed pouch. Make sure the seals are secure so steam cannot escape.
Bake the foil packets on the baking sheet for 12 to 15 minutes, or until the shrimp is pink and cooked through.
Carefully remove the baking sheet from the oven. Open the packets slowly to release the steam.
Garnish with fresh chopped parsley before serving directly from the foil packets.
Notes
If you do not have heavy-duty foil, use two layers of regular aluminum foil for each packet.
Adjust the amount of Cajun seasoning based on your preference for heat.
You can substitute frozen corn kernels for fresh corn if needed; do not thaw them first.
