These roasted pumpkin fries are a delightful and unique way to enjoy the flavors of fall. They’re crispy on the outside, tender on the inside, and served with a zesty spicy ketchup that perfectly complements the sweetness of the pumpkin. It’s a fun and easy recipe that captures the essence of the season.

Ingredients

Scale
  • 1 medium pumpkin (about 2-3 lbs), peeled, seeded, and cut into 1/2-inch thick fry shapes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Spicy Ketchup:
  • 1 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sriracha or other hot sauce (adjust to taste)
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the pumpkin fries with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Spread the pumpkin fries in a single layer on the prepared baking sheet.
  4. Roast for 20-25 minutes, flipping halfway through, until the fries are tender and slightly caramelized.
  5. While the fries are roasting, prepare the spicy ketchup. In a small bowl, whisk together ketchup, Worcestershire sauce, sriracha, and Dijon mustard.
  6. Serve the hot roasted pumpkin fries immediately with the spicy ketchup for dipping.

Notes

  • Choose a pumpkin variety that is firm and not too watery, such as sugar pie pumpkin or kabocha squash.
  • For extra crispiness, ensure the pumpkin fries are cut to a uniform size and not overcrowded on the baking sheet.
  • Adjust the amount of sriracha in the ketchup to your preferred level of heat.
