This fresh, crunchy raw carrot salad captures the bright flavors of Asian cuisine and comes together in minutes. It is a light, refreshing side dish perfect for meal prep or a weeknight dinner.

Ingredients

Scale
  • 4 large carrots, peeled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon ground ginger
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon toasted sesame seeds, for garnish
  • 2 tablespoons chopped fresh cilantro or green onions, for garnish

Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into long, thin ribbons. Stop peeling when you reach the core. Discard the cores.
  2. In a small bowl, whisk together the lime juice, soy sauce, sesame oil, honey, Dijon mustard, ground ginger, and red pepper flakes, if using. This creates your tangy carrot salad dressing.
  3. Place the carrot ribbons in a medium bowl. Pour the dressing over the ribbons.
  4. Toss everything gently until the carrot ribbons are evenly coated with the lime sesame carrot salad dressing.
  5. Let the salad sit for 5 minutes to allow the carrots to soften slightly.
  6. Transfer the raw carrot salad to a serving dish. Sprinkle with toasted sesame seeds and fresh cilantro or green onions before serving immediately.

Notes

  • For an extra crunch, you can use a mandoline to create very thin carrot shreds instead of ribbons.
  • If you are making this ahead of time, keep the dressing separate and toss just before serving to maintain the crisp texture.
  • This light & refreshing salad is a wonderful healthy carrot side dish.
