Ingredients
Scale
10-12 rice paper wrappers
1 cup shredded carrots
1 cup thinly sliced red cabbage
1 cup thinly sliced yellow bell pepper
1 cup thinly sliced orange bell pepper
1 cup thinly sliced cucumber
1 cup fresh mint leaves
1 cup fresh cilantro leaves
1/2 cup cooked vermicelli noodles (optional)
For the Peanut Sauce:
1/2 cup smooth peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey or maple syrup
1 clove garlic, minced
1/4 cup warm water (or more, to reach desired consistency)
Instructions
Prepare your vegetables: Wash and thinly slice all your vegetables.
Assemble the spring rolls: Dip one rice paper wrapper in warm water for about 20-30 seconds until pliable. Lay it flat on a clean surface.
Layer the fillings: Arrange a small amount of each vegetable, mint, cilantro, and vermicelli noodles (if using) in the center of the wrapper, leaving space on the sides.
Fold the roll: Fold the bottom edge of the wrapper over the filling. Then, fold in the sides, and tightly roll up the spring roll from the bottom. Repeat with the remaining wrappers and fillings.
Make the peanut sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, and minced garlic.
Adjust sauce consistency: Gradually add warm water, whisking until the sauce is smooth and reaches your desired dipping consistency.
Serve: Serve the fresh spring rolls immediately with the peanut sauce for dipping.
Notes
For a spicier sauce, add a pinch of red pepper flakes or a dash of sriracha.
You can add cooked shrimp or chicken for a more substantial meal.
Experiment with different vegetables like avocado, bean sprouts, or edamame.
