Make a smooth, lump-free cheese sauce from scratch in under 15 minutes. This recipe works well for mac and cheese, nachos, or topping vegetables.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk (whole milk recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dry mustard powder
  • Pinch of cayenne pepper (optional)
  • 8 ounces sharp cheddar cheese, shredded

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour to create a smooth paste (roux). Cook for 1 minute, stirring constantly.
  3. Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. Do not let it boil rapidly.
  4. Remove the saucepan from the heat. Stir in the salt, pepper, dry mustard, and cayenne pepper, if using.
  5. Add the shredded cheddar cheese one handful at a time, stirring until each addition is fully melted and smooth before adding the next.
  6. Stir until the cheese sauce is completely smooth and velvety. Serve immediately.

Notes

  • Shred your own cheese; pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • Use low heat when adding the cheese to prevent the sauce from becoming grainy.
  • For a thinner sauce, add a splash more milk after the cheese is incorporated.
