- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup pumpkin puree
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup strong brewed coffee, cooled
- Optional: 1/2 cup chocolate chips or chopped nuts
- Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, pumpkin pie spice, cinnamon, nutmeg, and cloves.
- In a separate medium bowl, whisk together the pumpkin puree, melted butter, milk, eggs, vanilla extract, and cooled coffee until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- If using, gently fold in the chocolate chips or nuts.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Add a swirl of whipped cream or a drizzle of caramel sauce on top before serving for an extra special touch.
- These muffins can be stored in an airtight container at room temperature for up to 3 days.
