Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar (for filling)
  • 1/4 teaspoon vanilla extract (for filling)
  • 1 large egg yolk (for filling)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a large bowl, whisk the sugars, melted butter, eggs, pumpkin puree, and vanilla extract until combined.
  4. Alternate adding the dry ingredients and the buttermilk to the wet ingredients, mixing until just combined. Do not overmix the batter.
  5. Prepare the cream cheese filling: In a small bowl, beat the softened cream cheese, 2 tablespoons of sugar, 1/4 teaspoon vanilla extract, and the egg yolk until smooth and creamy.
  6. Fill each muffin liner about two-thirds full with the pumpkin batter.
  7. Drop a small spoonful of the cream cheese mixture onto the center of the pumpkin batter in each cup.
  8. Use a toothpick or small knife to gently swirl the cream cheese into the pumpkin batter.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted into the muffin part (avoiding the filling) comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use real pumpkin puree for the best flavor and texture.
  • Do not overmix the batter once the flour is added; this keeps your muffins tender.
  • Make sure your cream cheese filling ingredients are at room temperature for smooth mixing.
  • This recipe is a wonderful way to remember the spices we found in Morocco.
