These pulled pork empanadas are a flavorful hand pie filled with tender, smoky BBQ pulled pork, perfect for a satisfying snack or appetizer. They capture the essence of slow-cooked BBQ in a convenient, portable pastry.
Add the cooked pulled pork, BBQ sauce, smoked paprika, and garlic powder to the skillet. Stir to combine and cook for 5-7 minutes, allowing the flavors to meld. Season with salt and pepper to taste. Remove from heat and let cool slightly.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the puff pastry sheets and cut them into 4-inch squares.
Place about 2 tablespoons of the pulled pork filling on one half of each pastry square, leaving a small border.
Fold the other half of the pastry over the filling to create a half-moon shape. Crimp the edges with a fork to seal.
Place the empanadas on the prepared baking sheet.
Brush the tops of the empanadas with the beaten egg wash. Cut a small slit in the top of each empanada to allow steam to escape.
Bake for 18-20 minutes, or until the pastry is golden brown and puffed up.
Let cool slightly before serving.
Notes
You can use leftover pulled pork or store-bought pulled pork.
Adjust the amount of BBQ sauce to your preference for sauciness.
Feel free to add other vegetables like corn or jalapeños to the filling.
