Ingredients
Scale
1 large egg
1/4 cup unsweetened almond milk
1 scoop vanilla or unflavored protein powder
2 tablespoons oat flour
1/2 teaspoon baking powder
1/4 teaspoon vanilla extract
Pinch of salt
Instructions
In a small bowl, whisk the egg and almond milk together until smooth.
Add the protein powder, oat flour, baking powder, vanilla extract, and salt to the wet ingredients.
Mix well until you have a smooth, thick batter. Do not overmix.
Lightly grease a microwave-safe bowl or ramekin (about 1 cup capacity).
Pour the batter into the prepared bowl.
Microwave on high for 70 to 90 seconds. Check at 70 seconds; the pancake should be set and spring back lightly when touched.
Carefully remove from the microwave. Let it cool for one minute before inverting onto a plate.
Top with your favorite additions like berries or a drizzle of maple syrup.
Notes
For a less dense texture, use whey protein isolate.
If the batter seems too thick, add a teaspoon more almond milk.
Cooking time varies by microwave wattage, so watch it closely the first time you make this.
