Ingredients
Scale
1 cup whole wheat flour
1/2 cup vanilla or unflavored protein powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup chocolate chips
Instructions
Preheat your oven to 375°F. Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, protein powder, baking soda, and salt. Set this aside.
In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until just combined.
Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just incorporated. Do not overmix.
Fold in the chocolate chips using a spatula.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. You want them slightly thicker for chewiness.
Bake for 9 to 11 minutes. The edges should look set, but the centers should still appear slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra chewy cookie, chill the dough for 30 minutes before baking.
Adjust the protein powder slightly if your dough seems too dry; add a teaspoon of milk if necessary.
We love using high-quality dark chocolate chips for the best flavor.
