Ingredients
Scale
4 large eggs
1/2 cup egg whites
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon milk or water
4 slices whole-wheat English muffins
4 slices low-fat cheddar cheese
4 slices lean ham or turkey bacon (about 4 oz total)
Cooking spray
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a baking sheet.
Whisk eggs, egg whites, salt, pepper, and milk together in a bowl.
Pour the egg mixture into a lightly greased 9×13 inch baking pan.
Bake for 15-20 minutes, or until the eggs are set.
Once cooled slightly, cut the egg into four equal squares.
Toast the English muffins.
Assemble the sandwiches: place one egg square, one slice of cheese, and one portion of ham or bacon on each toasted muffin half. Top with the other half.
Wrap each assembled sandwich tightly in plastic wrap, then wrap again in aluminum foil.
For meal prep, place all wrapped sandwiches in a freezer-safe bag.
Notes
To reheat from frozen, remove plastic wrap but leave the foil on. Bake at 350°F (175°C) for 25-30 minutes until heated through.
You can microwave a frozen sandwich for 1.5 to 2 minutes, flipping halfway, for a faster reheat. Check that it is hot before eating.
If reheating from the refrigerator (after assembly), bake for 10-15 minutes or microwave for about 45 seconds.
Feel free to substitute the meat with spinach or avocado for a lighter option.
