Create a tender, flavorful pork roast with perfectly cooked vegetables in one pan. This recipe brings back the warmth of a classic home-cooked meal, soaking the vegetables in rich pork drippings.

Ingredients

Scale
  • 3 lb Pork Loin Roast
  • 1.5 lbs Potatoes, quartered
  • 1 lb Carrots, roughly chopped
  • 1 large Onion, quartered
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 cup Chicken Broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes, carrots, and onion with olive oil, half of the salt, pepper, thyme, and rosemary.
  3. Place the seasoned vegetables in the bottom of a large roasting pan.
  4. Rub the pork roast all over with the remaining salt, pepper, thyme, and rosemary. Press the minced garlic onto the exterior of the pork.
  5. Place the pork roast directly on top of the vegetables in the roasting pan.
  6. Pour the chicken broth into the bottom of the pan, around the vegetables.
  7. Roast for 20 minutes at 400°F (200°C).
  8. Reduce the oven temperature to 350°F (175°C). Continue roasting for about 1 hour to 1 hour 15 minutes, or until an internal temperature of 145°F (63°C) is reached in the thickest part of the pork.
  9. Remove the roast from the oven and let it rest on a cutting board, loosely tented with foil, for 10 minutes before slicing.
  10. Serve the sliced pork with the roasted vegetables.

Notes

  • Richard suggests using fresh herbs if you have them; double the amount listed for dried herbs.
  • We sometimes add a splash of white wine to the broth for extra depth.
  • Browning the roast on the stovetop before putting it in the oven gives a nice crust.
