These Pomegranate Glazed Brussels Sprouts are a festive and flavorful side dish, perfect for holiday gatherings. The sweet and tangy pomegranate glaze perfectly complements the slightly bitter sprouts, creating a delightful balance.

Ingredients

Scale
  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup pomegranate juice
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Pomegranate seeds, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the Brussels sprouts with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized.
  4. While the sprouts are roasting, combine pomegranate juice, balsamic vinegar, honey, and minced garlic in a small saucepan.
  5. Bring to a simmer over medium heat and cook until the glaze has thickened, about 5-7 minutes.
  6. Once the Brussels sprouts are done, drizzle the pomegranate glaze over them and toss to coat.
  7. Serve immediately, garnished with pomegranate seeds if desired.

Notes

  • For a deeper flavor, you can roast the garlic cloves along with the Brussels sprouts before mincing.
  • Adjust the sweetness of the glaze by adding more or less honey.
  • If you don’t have honey, maple syrup can be used as a substitute.
