Make these Pineapple Meatballs for a wonderful appetizer or main dish. You get a sweet and sour flavor from the tangy, sticky sauce. This recipe brings back great memories and is easy for any party or weeknight dinner.

Ingredients

Scale
  • 1 pound ground meat (beef, pork, or turkey)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 (20 ounce) can pineapple chunks, drained (reserve juice)
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cider vinegar
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced

Instructions

  1. In a bowl, gently mix the ground meat, breadcrumbs, egg, milk, salt, and pepper. Do not overmix.
  2. Roll the mixture into small, uniform meatballs.
  3. Brown the meatballs in a large skillet over medium heat. Drain off any excess fat.
  4. In a separate small saucepan, whisk together the reserved pineapple juice, ketchup, brown sugar, soy sauce, cider vinegar, ginger, and garlic.
  5. Bring the sauce to a simmer and cook for 3 minutes until slightly thickened.
  6. Add the drained pineapple chunks and the browned meatballs to the sauce.
  7. Stir gently to coat everything well.
  8. Cover the skillet and cook on low heat for 15 to 20 minutes, or until the meatballs are cooked through and the sauce is sticky.
  9. Serve hot with toothpicks or over rice.

Notes

  • Richard suggests tasting the sauce before adding the meatballs; adjust the tang or sweetness to match your memory of the best version.
  • For a thicker sauce, simmer uncovered for the last 5 minutes of cooking.
  • You can bake the meatballs instead of frying them for an even simpler clean-up.
