You will create a savory Pork Tenderloin glazed with a rich, nutty peanut butter sauce. This recipe brings together tender roasted pork with Asian-inspired flavors for a memorable dinner.

Ingredients

Scale
  • 1 (about 1.5 lb) pork tenderloin
  • 1/4 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup water or chicken broth
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
  2. Pat the pork tenderloin dry with paper towels. Season it generously with salt and pepper.
  3. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and water or broth until smooth. This is your glaze.
  4. Place the seasoned pork tenderloin in the prepared baking dish.
  5. Brush about half of the peanut butter glaze evenly over the top and sides of the pork.
  6. Roast for 20 minutes.
  7. Remove the pork from the oven and brush with half of the remaining glaze.
  8. Return to the oven and roast for another 10 to 15 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
  9. Remove the pork from the oven. Brush with the last bit of glaze and let it rest on a cutting board for 5 minutes before slicing.
  10. Drizzle with sesame oil before serving.

Notes

  • For an extra layer of flavor, sear the pork tenderloin on all sides in a hot, oiled skillet before roasting.
  • If you prefer a thicker glaze, reduce the sauce slightly on the stovetop before brushing it on.
  • Serve this with steamed rice and fresh, crisp green beans.
