Ingredients
Scale
1 bag (10-12 oz) broccoli coleslaw mix
3 oz uncooked oriental ramen noodles (discard seasoning packet)
1/2 cup shredded carrots (optional, for color)
1/4 cup sliced green onions
2 tablespoons sesame seeds (toasted)
1/4 cup vegetable oil
1/4 cup white wine vinegar or rice vinegar
2 tablespoons granulated sugar
1 tablespoon soy sauce
1 teaspoon ground mustard
1/2 teaspoon pepper
Instructions
Place the uncooked ramen noodles in a zip-top bag. Crush them into small pieces using your hands or a rolling pin.
In a large bowl, combine the broccoli slaw mix, shredded carrots (if using), and green onions.
In a separate small bowl, whisk together the oil, vinegar, sugar, soy sauce, ground mustard, and pepper until the sugar dissolves. This is your dressing.
Pour the dressing over the vegetable and noodle mixture. Toss well to coat everything evenly.
Stir in the crushed ramen noodles and sesame seeds. Mix gently.
Cover the slaw and refrigerate for at least 1 hour before serving. This allows the flavors to blend and the noodles to soften slightly.
Notes
Discard the ramen seasoning packet; you only need the noodles for crunch.
Toasting the sesame seeds intensifies their nutty flavor.
You can add sunflower seeds or slivered almonds for extra crunch.
