Bake the ultimate chocolate and peanut butter dream with these Oreo & Peanut Butter Brownie Cupcakes. Each cupcake features a rich, fudgy brownie base with a whole peanut butter-spread Oreo cookie baked right inside. It is a decadent treat that brings together two favorite flavors.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1/2 cup creamy peanut butter
  • 12 whole Oreo cookies

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Stir in the chocolate chips, if using.
  6. Spread about 1 teaspoon of peanut butter onto the flat side of each Oreo cookie. Sandwich two cookies together to make a small peanut butter sandwich.
  7. Spoon about 2 tablespoons of the brownie batter into the bottom of each lined muffin cup.
  8. Gently press one peanut butter-Oreo sandwich into the center of the batter in each cup, pushing it down slightly.
  9. Top with the remaining batter, ensuring the Oreo is mostly covered. Fill cups about 3/4 full.
  10. Bake for 20 to 25 minutes, or until a toothpick inserted near the edge comes out with moist crumbs attached.
  11. Let the cupcakes cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra layer of flavor, you can gently warm the peanut butter slightly before spreading it on the Oreos.
  • Richard suggests tasting the batter before baking for quality control.
  • These are best enjoyed the same day, though they keep well in an airtight container for up to three days.
