Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  4. Add the chopped onion to the same skillet and cook until softened, about 3 minutes.
  5. Stir in the minced garlic and cook for 1 minute more until fragrant.
  6. Add the orzo, chicken broth, lemon juice, and oregano to the skillet. Stir well.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes, stirring occasionally to prevent sticking.
  8. Return the cooked chicken to the skillet. Cover and cook for another 5-7 minutes, or until the orzo is tender and most of the liquid is absorbed.
  9. Remove the skillet from the heat. Stir in the Parmesan cheese.
  10. Let it rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • This dish tastes best when the orzo absorbs most of the liquid, creating a creamy texture.
  • You can use chicken thighs instead of breasts if you prefer darker meat.
  • Taste and adjust the lemon juice or salt before serving.
  • Richard remembers a similar bright flavor from a small café in Athens.
