Make this One Skillet Creamy Zucchini Pasta for a light, comforting meal without a thin sauce. Eleanor and Richard share this simple recipe from their kitchen diary.

Ingredients

Scale
  • 1 pound pasta (like linguine or fettuccine)
  • 2 medium zucchini, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and cook for one minute until fragrant. Do not let it brown.
  3. Add the sliced zucchini and Italian seasoning to the skillet. Cook for 3 to 5 minutes until the zucchini begins to soften slightly.
  4. Pour in the broth, bring it to a simmer, and add the dry pasta. Stir well.
  5. Cover the skillet and cook according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is nearly tender.
  6. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese. Continue stirring until the sauce thickens slightly and coats the pasta beautifully.
  7. Season with salt and pepper to your liking.
  8. Serve immediately, garnished with fresh basil and extra Parmesan cheese.

Notes

  • Stir frequently while the pasta cooks to prevent sticking to the bottom of the skillet.
  • If the sauce seems too thick, add a splash more broth or cream.
  • Use fresh Parmesan cheese for the best flavor and melting quality.
