Create a flavorful, satisfying taco rice dish cooked entirely in one skillet. This recipe delivers all the bold taco tastes you love with perfectly cooked rice, making cleanup simple.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 cup uncooked long-grain white rice
  • 1 3/4 cups water or low-sodium broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup sour cream (for topping)
  • 1/4 cup chopped fresh cilantro (for topping)

Instructions

  1. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess fat.
  2. Stir in the taco seasoning and mix well to coat the meat.
  3. Add the uncooked rice, water or broth, black beans, and diced tomatoes with green chilies to the skillet. Stir everything together.
  4. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 18 to 20 minutes, or until the rice is tender and all the liquid is absorbed. Do not lift the lid during this time.
  5. Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
  6. Fluff the rice gently with a fork. Sprinkle the shredded cheese evenly over the top of the rice mixture.
  7. Cover the skillet again for 2 to 3 minutes, just until the cheese melts.
  8. Serve directly from the skillet, topping each portion with a dollop of sour cream and fresh cilantro.

Notes

  • Richard remembers the best taco flavor came from using fresh lime juice added right before serving.
  • For extra flavor, use beef broth instead of water when cooking the rice.
  • If you prefer less spice, skip the green chilies in the diced tomatoes.
  • This dish tastes great the next day, reheated gently on the stovetop.
