This One Pot Creamy Sausage Gnocchi brings rich flavor and perfectly cooked gnocchi right to your table. It is a simple, satisfying meal Eleanor and Richard recreated from a memory of comforting Italian flavors.

Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Italian sausage in a large pot or Dutch oven over medium heat. Break the sausage apart as it cooks. Drain off any excess grease.
  2. Add the chopped onion to the pot. Cook until softened, about 3 to 5 minutes.
  3. Stir in the minced garlic, Italian seasoning, dried basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their juices) and the chicken broth. Bring the mixture to a simmer.
  5. Add the package of gnocchi to the simmering liquid. Stir gently.
  6. Cook according to the gnocchi package directions, usually about 3 to 5 minutes, stirring occasionally until the gnocchi float and are tender. You want them soft, not mushy.
  7. Reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese. Heat through gently, do not boil.
  8. Taste the sauce and season with salt and black pepper as needed.
  9. Serve immediately, garnished with fresh chopped parsley.

Notes

  • Richard suggests tasting the broth before adding the gnocchi to adjust seasonings first.
  • For the best gnocchi texture, do not over-stir once the gnocchi is added.
  • If the sauce seems too thick, add a splash more broth or cream.
  • This recipe works well with mild or hot Italian sausage, depending on your preference for heat.
