Bring the bold flavor of tacos into a comforting pasta dish, all cooked in one pot. You get rich taco seasoning coating every piece of pasta without any soupy mess. This recipe is simple, fast, and full of flavor.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 8 ounces elbow macaroni or small pasta shape
  • 1 cup shredded cheddar cheese
  • 1/4 cup water

Instructions

  1. Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning, mixing well with the beef and onion. Cook for one minute until fragrant.
  3. Pour in the diced tomatoes (with their juice) and the beef broth. Bring the mixture to a boil.
  4. Add the dry pasta to the boiling liquid. Stir immediately to prevent sticking.
  5. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes. Stir occasionally during this time to keep the pasta moving.
  6. Remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
  7. If the pasta seems too thick, stir in the 1/4 cup of water until you reach your desired consistency. Serve immediately.

Notes

  • We use sharp cheddar for the best flavor in this dish.
  • Feel free to top this with your favorite taco toppings like sour cream or salsa.
  • Richard remembers a version with a touch of cumin added to the seasoning mix—you might try that!
