Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
Salt and black pepper to taste
1 cup fresh spinach, finely chopped
4 ounces cream cheese, softened
1/2 cup crumbled feta cheese
2 cloves garlic, minced
1/4 teaspoon dried oregano
1 tablespoon fresh lemon juice
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
In a small bowl, combine the chopped spinach, softened cream cheese, feta cheese, minced garlic, oregano, and lemon juice. Mix until the filling is smooth and well combined.
Pat the salmon fillets dry with paper towels. Place the fillets on the prepared baking sheet.
Season the salmon lightly with salt and pepper.
Divide the creamy spinach feta mixture evenly among the four salmon fillets. Gently spread or press the mixture onto the top of each fillet.
Drizzle the tops of the stuffed salmon with the olive oil.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time depends on the thickness of your fillets.
Serve immediately directly from the pan.
Notes
For a complete one-pan meal, add asparagus or cherry tomatoes to the baking sheet around the salmon during the last 10 minutes of cooking.
Do not overbake the salmon; check for doneness early to keep it moist.
If you prefer a slightly tangier filling, add one teaspoon of Dijon mustard to the cheese mixture.
