Cook a flavorful, creamy Cajun catfish dinner entirely in one pan, featuring sweet corn for an easy weeknight meal.

Ingredients

Scale
  • 4 (6 ounce) catfish fillets
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup frozen or fresh corn kernels
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large oven-safe skillet or baking dish.
  2. Season the catfish fillets on both sides with half of the Cajun seasoning, salt, and pepper. Set aside.
  3. Heat the olive oil in the skillet over medium heat on the stovetop. Add the onion and bell pepper. Cook for 5 minutes until softened.
  4. Add the corn and garlic to the skillet. Cook for 2 minutes until fragrant.
  5. Stir in the remaining Cajun seasoning and thyme. Cook for 1 minute.
  6. Pour in the heavy cream and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let it simmer for 3 minutes until it starts to thicken slightly.
  7. Stir in the Parmesan cheese until melted and the sauce is smooth. Taste the sauce and adjust seasoning if needed.
  8. Nestle the seasoned catfish fillets into the creamy sauce in the skillet.
  9. Transfer the skillet to the preheated oven. Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork.
  10. Remove from the oven. Garnish with fresh parsley before serving directly from the pan.

Notes

  • For a spicier sauce, add 1/4 teaspoon of cayenne pepper with the other spices.
  • If you do not have oven-safe skillets, transfer the vegetable mixture and sauce to a baking dish before adding the fish and baking.
  • Use frozen corn directly from the freezer; do not thaw it first.
