Ingredients
Scale
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/2 cup strawberry preserves or jam
1/4 cup freeze-dried strawberries, crushed into a powder
1/4 cup fresh strawberries, finely diced
Instructions
In a large bowl, beat the softened cream cheese until smooth using an electric mixer.
Gradually add the powdered sugar and vanilla extract to the cream cheese mixture. Beat until fully combined and fluffy.
In a separate, clean bowl, whip the heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
Fold in the strawberry preserves and the crushed freeze-dried strawberries until the mixture is uniformly pink and streaked with red.
Stir in the finely diced fresh strawberries.
Transfer the dip to a serving bowl. Chill for at least 30 minutes before serving to allow it to firm up slightly.
Garnish the top with a few extra diced strawberries before serving with graham crackers, vanilla wafers, or pretzels.
Notes
For a lighter dip, substitute half of the cream cheese with plain Greek yogurt.
If you do not have freeze-dried strawberries, use 1/2 cup of very well-drained, pureed fresh strawberries, but reduce the chilling time to 1 hour minimum.
You can make this dip up to 2 days ahead; cover and refrigerate. Allow it to sit at room temperature for 10 minutes before serving for the best texture.
