Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice, fresh
  • 1 cup heavy whipping cream, cold
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup fresh strawberries, sliced (for topping and mixing)

Instructions

  1. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
  2. Press the crumb mixture firmly into the bottoms of 6 small ramekins or dessert cups. Chill in the refrigerator while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and vanilla extract.
  4. Mix in the fresh lemon juice until just combined. Set this mixture aside.
  5. In a separate small bowl, sprinkle the gelatin over the 2 tablespoons of cold water. Let it sit for 5 minutes to bloom.
  6. Microwave the bloomed gelatin for about 10-15 seconds until it is completely liquid and clear. Do not let it boil.
  7. Gently whisk the warm liquid gelatin into the cream cheese mixture until fully incorporated.
  8. In a clean, separate bowl, whip the cold heavy whipping cream until stiff peaks form.
  9. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it. Then, carefully fold in the remaining whipped cream until no white streaks remain.
  10. Gently fold half of the sliced strawberries into the cheesecake filling.
  11. Spoon or pipe the filling evenly over the chilled crusts in your cups.
  12. Refrigerate for at least 4 hours, or until the cheesecake is completely firm.
  13. Before serving, top each cup with the remaining fresh strawberry slices.

Notes

  • Make sure your cream cheese is fully softened for a smooth filling.
  • Use fresh lemon juice for the best bright flavor.
  • Chill time is important; do not rush setting the cups.
